Title: Couscous with Peas and Onion

Yield: 4 Servings

1 1/2cFinely chopped onions
1tbOlive oil
1cFresh or frozen green peas
1 1/2tsChopped fresh sage
1/2tsSalt
1 1/3c;water
1cWhole-wheat couscous
  ;salt to taste
  Few fresh sage leaves
  Lemon wedges or balsamic vinegar

Combine onions and oil in heavy skillet, preferably nonstick. Cover and saute, stirring occasionally, for 10 - 15 minutes, until lightly browned. Add peas, sage, salt, water and couscous. Cover and cook on low heat for about 5 minutes, until pease are tender but still bright green and all the water is absorbed. Fluff couscous with a fork. Salt to taste.

Garnish with a few sage leaves and serve with lemon wedges, or pass a bruet of balsamic vinegar.
